Quinoa Cookie Dough Bites

Okay soooooo these “cookies” are basically just giant globs of healthy cookie dough heaven. Packed with all pure ingredients which actually leave you satisfyingly full! Between the quinoa and the peanut butter and the almond flour these cookies are packed with protein. As many as you are going to want to eat this protein actually saves us… just don’t let your mind overtake your stomach 😁

  • 1/2 natural peanut butter (I use unsalted)
  • 2 tbsp applesauce
  • 1/4 raw honey or agave
  • 1 tbsp vanilla extract
  • 1/2 tsp sea salt
  • 1/3 almond flour
  • 1 cup cooked quinoa
  • 1/2 cup uncooked quinoa
  • 1/4 cup dairy free chocolate chips
  1. Combine peanut butter, apple sauce, honey, vanilla extract and sea salt
  2. Add in rest of the ingredients
  3. Spoon onto sheet covered with parchment paper and freeze for 20 minutes
  4. After 20 minutes you can eat yourself happy but be sure to store them in the freezer!
